Cantonese Shrimp and Eggs (滑蛋蝦仁) | The Woks of Life
Cantonese Shrimp and Eggs (滑蛋蝦仁) is a classic dish that transforms scrambled eggs into an epic dinnertime experience. The trick is the simple addition of a cornstarch slurry, which makes the eggs extra tender and silky! When you make this dish at home, you’ll truly feel like you’re a master of your wok and kitchen!
This is not the last you will hear from me about cornstarch and eggs, but it is a pressing dish that we should address, since the last time we did was in 2014, when my dad shared his Scrambled Eggs and Shrimp with Chinese Toon Sprouts.
Since then, I have grown super fond of this dish. More recently, I took it upon myself to further learn the way of the scrambled egg. And I will start out by telling you up front:
The trick is adding a cornstarch slurry to your beaten eggs. Beat the eggs vigorously until large bubbles form (but only just). Perhaps as a bonus, keep your eggs cold until you’re ready to beat them and cook them.
That’s in order of importance, too, by the way!

    Just tried it. It works great. When eating scrambled eggs, I won't make them any differently from now on. The texture is awesome. I think I might not want this same texture for something like a breakfast burrito, where, I think, I like that meatier egg to stand up against the tortilla, but any way else and this is the recipe for me. Honestly, my biggest surprise was there wasn't any fish sauce thrown in there...lol. I know Thai style eggs use it a lot. I believe the Taiwanese put some in for their infamous oyster omelets.

    Sounds like gimmicky place ... surprised they don't make you walk THROUGH the gift store to get into the restaurant... but I guess they do that with the "bottles of wine" store... and.. after eating this $200 meal.. you needed to stop by a burger joint to fill up and get full!

    Many years ago, I worked with a Chinese woman who made the most delicious crunchy cold Spaghetti Squash salad that to this day I dream about. She said she was unable to give me the recipe because the dressing was a ‘home sauce’. So thank you from the bottom of my heart for this recipe. Steamed Spaghetti Squash in my IP is now the only way I make it and now I have the dressing too. I hope it’s on your website.

      not necessarily beverly! you could easily make it in a nonstick skillet. Cast iron could even work as long as it is very well seasoned!

    I made Demi Glacé. It’s the The Royce Ross of sauces. I put it for at least 3-10 days cooking until the bones are liquified.. Usually I take my Demi Glacé and put it my freezer in ice cube holder. I use the Demi Glacé in other recipes and sauces. I use it on my Peking duck or in other cooking applications. A little goes a long way. I was blessed by having an older sister who’s an excellent cook. I wonder you would use a Demi Glacé in your cooking?

    That's a fun one, and thanks for sharing your improved version, Kaitlin. I came across something similar at a Japanese grocery store sold in miniature tubs along with sushi. As a Westerner, it was delightful to me, wondered what it was and I think just a mixture of mayonnaise and sriracha sauce. Definitely not Asian and I read the NPR story about it as well.
